Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Carefully unroll the thawed puff pastry onto the prepared baking sheet. Using a fork, prick the pastry several times to prevent it from puffing up too much.
Assembly and Baking
- Arrange the sliced heirloom tomatoes on top of the pastry, leaving a 1-inch border around the edges. Sprinkle the crumbled goat cheese and chopped fresh basil evenly over the tomatoes.
- Drizzle with olive oil and season generously with salt and black pepper.
- Bake for 20-30 minutes, or until the pastry is golden brown and the tomatoes are tender. Let the tart cool slightly before slicing and serving.
Notes
For best results, use ripe, in-season heirloom tomatoes. You can experiment with other herbs like thyme or oregano for different flavor profiles.
