  • 1 sheet pre-made puff pastry thawed
Filling
  • 2-3 Heirloom tomatoes sliced 1/4-inch thick
  • 4 ounces Goat cheese crumbled
  • 1/4 cup Fresh basil chopped
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully unroll the thawed puff pastry onto the prepared baking sheet. Using a fork, prick the pastry several times to prevent it from puffing up too much.
Assembly and Baking
  1. Arrange the sliced heirloom tomatoes on top of the pastry, leaving a 1-inch border around the edges. Sprinkle the crumbled goat cheese and chopped fresh basil evenly over the tomatoes.
  2. Drizzle with olive oil and season generously with salt and black pepper.
  3. Bake for 20-30 minutes, or until the pastry is golden brown and the tomatoes are tender. Let the tart cool slightly before slicing and serving.

Notes

For best results, use ripe, in-season heirloom tomatoes. You can experiment with other herbs like thyme or oregano for different flavor profiles.
