Ingredients
  

Vegetables
  • 2 medium carrots chopped
  • 2 medium celery stalks chopped
  • 1 medium yellow onion chopped
  • 2 medium potatoes peeled and diced
  • 1 28-ounce can canned diced tomatoes undrained
  • 1 16-ounce bag frozen mixed vegetables
  • 2 cloves garlic minced

Method
 

Preparation
  1. Sauté carrots, celery, and onion in olive oil in a large pot until softened.
Cooking
  1. Add minced garlic, diced potatoes, canned tomatoes, mixed vegetables, and vegetable broth to the pot.
  2. Bring the soup to a boil, then reduce heat and simmer until vegetables are tender.
  3. Season with salt and black pepper to taste and serve hot.

Notes

For extra flavor, add a bay leaf during simmering and remove before serving. You can also customize the vegetables based on what you have on hand or prefer.
