  • 3 cups cooked rice
  • 1 pound shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 carrots, diced
  • 1/2 cup frozen peas
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 green onions, chopped
Optional Garnishes
  • sesame seeds
  • extra green onions

Method
 

Preparation
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked, then remove them from the skillet and set aside.
Cooking
  1. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side, then remove and set aside.
  2. Add the diced carrots, minced garlic, and grated ginger to the skillet, stirring constantly for 2-3 minutes until fragrant and slightly tender.
  3. Stir in the cooked rice and frozen peas, breaking up any clumps of rice and mixing well with the vegetables.
  4. Pour in the soy sauce and sesame oil, tossing everything to ensure the rice is evenly coated.
  5. Return the cooked shrimp and scrambled eggs to the skillet, folding them into the fried rice.
  6. Stir in the chopped green onions, cooking for another minute until everything is heated through.
Serving
  1. Serve the shrimp fried rice immediately, garnished with additional green onions or sesame seeds if desired.

Notes

For best results, use day-old cooked rice, as it is drier and will result in a better texture for fried rice. Adjust soy sauce to taste, and feel free to add other vegetables like bell peppers or corn. This recipe can be easily scaled up or down based on your needs.
