Casserole
  • 3 pounds sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1 cup pecans, chopped
  • 1/3 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Boil the sweet potatoes until tender, then peel and mash them in a large bowl.
Casserole Assembly
  1. Mix the mashed sweet potatoes with sugar, melted butter, milk, beaten eggs, and vanilla extract until well combined.
  2. Pour the sweet potato mixture into the prepared baking dish.
Topping and Baking
  1. In a separate bowl, combine flour, brown sugar, chopped pecans, and melted butter to make the streusel topping. Sprinkle the topping evenly over the sweet potato mixture.
  2. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.

Notes

For an extra touch, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture. This casserole can be prepared a day in advance and baked just before serving.
