Tomato Basil Soup

Ingredients

  • 28 oz canned crushed tomatoes
  • 1 cup fresh basil leaves
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • salt and black pepper to taste

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Stir in crushed tomatoes and vegetable broth. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes.
  3. Remove the soup from heat. Stir in fresh basil leaves. Use an immersion blender to blend the soup until smooth, or carefully transfer to a regular blender and blend in batches. Season with salt and pepper to taste.

Notes

For extra creaminess, stir in a splash of heavy cream or a dollop of Greek yogurt after blending. Serve with a sprinkle of fresh basil and a side of crusty bread or grilled cheese for a complete meal.
