Cake
  • 1.5 cups All-purpose flour
  • 1.5 tsp Baking powder
  • 0.5 tsp Salt
  • 5 large Eggs separated
  • 1 cup Granulated sugar divided
  • 1 tsp Vanilla extract
  • 0.5 cup Milk (whole)
Milk Mixture
  • 12 oz Evaporated milk one can
  • 14 oz Sweetened condensed milk one can
  • 0.5 cup Heavy cream
Topping
  • 1.5 cups Heavy cream chilled
  • 0.25 cup Powdered sugar
  • 0.5 tsp Vanilla extract
  • Cinnamon for garnish (optional)

Method
 

Step 1: Bake the Cake
  1. Prepare the batter by combining dry ingredients, then mixing egg yolks with sugar, vanilla, and milk. Fold in whipped egg whites. Bake in a prepared pan until golden.
Step 2: Prepare and Apply Milk Mixture
  1. Whisk together the evaporated milk, sweetened condensed milk, and heavy cream for the milk mixture. Once the cake cools slightly, pierce it all over with a fork and slowly pour the milk mixture evenly over the cake, allowing it to soak in.
Step 3: Prepare and Apply Topping
  1. Whip the chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread it over the cooled, soaked cake and chill thoroughly before serving, garnishing with cinnamon if desired.

Notes

For best results, chill the cake for at least 4 hours, or preferably overnight, to allow the milk mixture to fully absorb and the flavors to meld.
