  • 2 lbs chicken breast cooked and shredded
  • 2 cans canned great northern beans rinsed and drained
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup sour cream for garnish
  • 0.5 cup shredded cheddar cheese for garnish
  • 0.25 cup fresh cilantro chopped, for garnish

Method
 

Instructions
  1. Sauté the chopped onion and minced garlic in a large pot over medium heat until softened, about 5 minutes.
  2. Add the cooked and shredded chicken breast, rinsed and drained great northern beans, chicken broth, and diced green chilies to the pot.
  3. Stir in the cumin, oregano, chili powder, salt, and black pepper, ensuring all ingredients are well combined.
  4. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes to allow the flavors to meld.
  5. Ladle the white chicken chili into bowls and garnish with a dollop of sour cream, shredded cheddar cheese, and fresh cilantro before serving.

Notes

For extra heat, add a pinch of cayenne pepper or a dash of your favorite hot sauce. This chili can be made ahead of time and reheats well. Store leftovers in an airtight container in the refrigerator for up to 3 days.
